The aging process tenderizes, concentrates the flavors, and imparts the meat with a delicious nutty flavor. This makes the large Filet meat of the Aged T-Bone extremely tender. Similar to the Porterhouse, the T-Bone is combination of one of the most flavorful cuts, the New York Strip, and the most tender cut, the Filet Mignon. T-Bone Steaks are the second steaks cut from sirloin end of the the short loin, just after the Porterhouse. The T-Bone has a smaller Filet when compared to the Porterhouse. However, the New York Strip portion of the T-Bone is larger than the Porterhouse and there is none of the tougher vein steak.
