The aging process imparts the meat with a delicious nutty flavor and tenderizes it. This makes the large Filet meat of the Aged Porterhouse extremely tender. The Porterhouse is combination of one of the most flavorful cuts, the New York Strip, and the most tender cut, the Filet Mignon. Porterhouse Steaks are the first steaks cut from sirloin end of the the short loin. As each Porterhouse is cut, the Filet portion narrows. When the Filet becomes less than 1 1/4 inches in diameter, the steak becomes a T-Bone. A single short loin only yields two Porterhouse steaks, meaning there are only four of these cuts per animal.
